Salsa
6 cups spinach
4 cups watercress
4 cups Boston Lettuce
1 tablespoon lemon juice
1 firm red apple
CRANBERRY DRESSING
1/3 cup conc. cranberry cocktail
1/4 cup vegetable oil
2 tablespoons rice or wine vinegar
1/4 teaspoon salt
PINCH each dry mustard granulated sugar and pepper.
Cranberry Dressing: In small bowl whisk together cranberry cocktail, oil, vinegar, salt, mustard, pepper and sugar.
In large salad bowl, toss together spinach, watercress, and lettuce. in small bowl, mix lemon juice with 2 tbsp water. Core and slice apple into thin wedges; add to lemon juice mixture and toss to coat.
Arrange apple slices on top of salad. Pour dressing over salad and toss to mix. Makes 8 servings.
